Thermadrone

Culinary Qualities: This softneck garlic from France is popular with chefs and will add an authentic flavor to your French dishes. If you are a Julia Child fan you will be pleasantly surprised at the difference adding this true French garlic can make in your cooking. Thermadrone has a true deep garlic flavor with a Dijon-type mustard middle note. This is unlike any other garlic we have tasted and seems to blend especially well with butter. It adds distinct garlic flavor without hotness to meat stocks, sautéed chicken dishes, casseroles, stirfries and other dishes.

Special Attributes: Softneck garlic can be braided. The bulbs are large and have a flattened shape. Thermadrone can be stored under the proper conditions for 6-9 months.

Growing Considerations: The large white bulbs contain 12-20 cloves. Plant the biggest cloves for the best results. Thermadrone matures earlier than hardneck garlic and is moderately easy to grow. It competes poorly with weeds and prefers a well drained soil.

Cloves per pound: 40-45 large cloves/lb or 50-65 medium cloves/lb. These numbers are approximate and will vary slightly. Thermadrone has very variable sized cloves.

Georgian Crystal.

Culinary Qualities: Clean fresh tasting garlic with a vastly superior flavor. Georgian Crystal adds the perfect crisp taste to stirfries, vegetables, chicken and fish. Susan loves it in stirfries where you want a garlic flavor that compliments but doesn’t overpower the rest of the dish. It works especially well with root vegetables, cabbage, white meats, seafood and fish. In addition, its mellow raw flavor is great in uncooked dips and salsas. It makes an addictive crab dip!

Special Attributes: The perfect Farmer’s Market garlic! It is big, bold, beautiful and easy to grow. Georgian Crystal’s huge beautiful cloves are frequently mistaken for Elephant garlic. We have had cloves weigh over 45 grams (cloves not bulbs; we have had bulbs that weigh between one-fourth and one-third of a pound)! It has large gorgeous bulbs with an iridescent white shimmer that almost beg to be featured in a still life. This sophisticated garlic is the ideal mix of great taste and beauty. It’s great taste and super big cloves make it ideal for restaurants and chefs.

Growing Considerations: The large bulbs usually contain 4-6 fat cloves. Georgian Crystal is easy to grow but will respond eagerly to a bit of care. Check out our garlic growing page to grow the biggest bulbs. This garlic is always our top performer, no matter what the weather. It is somewhat forgiving of lax weeding and needs no coddling. Georgian Crystal is a gorgeous looking plant and we have joked that we should always plant this garlic closest to the road since it is one of the most eye catching varieties.

Cloves per pound: 25-30 large cloves/lb or 30-40 medium cloves/lb. These numbers are approximate and will vary slightly.
How to Grow Garlic in the South!  
Jane’s German Red.

Culinary Qualities: Wonderfully full flavored dark garlic with a rich velvety taste. It adds a deep mellow flavor to stews, winter vegetables, roasts and wild game. German Red has a complex flavor that stands out in a dish. Its flavor is unlike any of our other varieties. Try roasting this garlic and you will not be disappointed.

Special Attributes: A true connoisseur’s garlic, this heirloom variety was obtained from an old Idaho homestead where it had been grown for over 100 years. Jane has been carefully cultivating it for the last few years and it is her favorite garlic. Cloves have a hard loose wrapper that makes them super easy to peel.

Growing Considerations: The bulbs contain 10-12 golden brown cloves. German Red cloves are smaller than Georgian Crystal, Romanian Red or Siberian cloves. They have a very distinct look that marks them as special. German Red bulbs can grow very large if given optimal growing conditions. It takes some loving care and good cultivation habits to grow the one-fourth pound bulbs. They love well drained soil enriched with organic matter and manure; the more you add the bigger your yield.

Romanian Red.

Culinary Qualities: This garlic is not for the mild mannered cook. Romanian Red adds a long lasting hot and spicy bite to any dish. Although it is pungent, it also has an excellent flavor. Do you find that you need to add a whole bulb of supermarket garlic to get the garlic flavor you want? Try Romanian Red; its heat and fiery flavor compliments Asian and Mexican dishes perfectly. It is the perfect counterpart to ginger in hot Asian dishes and can hold its own with strong meats. Use this garlic to make hot barbeque sauces, marinades, pickles and relishes.

Special Attributes: Did I mention that this garlic is hot? This is great garlic for chefs who like some sizzle in their dishes or someone who wants a ‘secret’ ingredient for their special barbeque sauce. Even if you tell them you added garlic, they will never be able to replicate the flavor without knowing it is Romanian Red.

Growing Considerations: Attractive large bulbs usually contain 2-6 plump cloves. Color is variable and ranges from almost all white to red streaked. This garlic needs good care, rich soil and freedom from weeds. If Romanian Red is treated well it almost reaches Georgian Crystal in size. If it is neglected, it will be much smaller.

Cloves per pound: 30-35 large cloves/lb or 40-50 medium cloves/lb. These numbers are approximate and will vary slightly.
Siberian.

Culinary Qualities: Delicate mild garlic flavor that compliments other flavors without overwhelming them. Siberian is perfect in light stirfries, dips or soups where only a hint of garlic flavor is desired. This is the variety for those who prefer a subtle approach to garlic flavor.

Special Attributes: If you are concerned about illness, this is the garlic for you. Siberian has the highest concentration of allicin compared to other garlic varieties. Allicin is a biologically active component of garlic which is antimicrobial and may have health benefits. In addition, Siberian’s mild flavor means that you can add more garlic to dishes and receive the maximal benefits. This large, beautiful garlic has a range of colors from pink to purple streaked to white.

Growing Considerations: The large bulbs with striking purple streaks usually contain 5-9 plump cloves. Like Georgian Crystal, Siberian is an easy to grow garlic. It produces large bulbs with a minimum of care and has beautiful purple flowers. See our garlic growing page for suggestions on how to grow big healthy bulbs.
